It's orange season here in the Sunshine State, so this time of year I am always looking for recipes using citrus. I made these the other day and they were delicious! Give them a try and let me know what you think!
Orange Marmalade Muffins
Makes 12 muffins
Ingredients
2 cups flour
2/3 cup sugar ( I used 1/2 coconut sugar and 1/2 granulated sugar)
2 teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon salt
2/3 cup orange juice (fresh or store bought)
½ cup oil

2 eggs
1/4 cup orange marmalade
1/4 cup chopped pecans

A few tablespoons of Sugar in the Raw
Preheat the oven to 350°F. Place
liners in 12 muffin cups, or grease muffin tin well.
In a small mixing bowl, combine the
dry ingredients: flour, sugar, baking powder, baking soda, and salt.
In a larger mixing bowl, whisk
together the orange juice, oil, eggs, and marmalade.
Sprinkle the dry ingredients over
the wet ingredients, and fold to combine. Add pecans.
Fill the muffin cups about 3/4 full, sprinkle Sugar in the Raw on top of each muffin.
Bake for 20-25 minutes
Serve warm if possible.
